Easy Cheeseburger Pie

As a mother of 4 boys, and one hungry hubby. I have to think cheap, and I have to think easy for our meals. When my hubby came across this recipe several years ago, before boys, we made it and loved it. (Yes, I said we. He also does a descent job of cooking and helping out in the kitchen). As years have gone by, we have revised the original recipe to fit our lives.

We have a times ran out of Bisquick and substituted Pancake mix, which by the way, is just as good. We have also started to DOUBLE this recipe, because the belly of a little boy seems to never get full of the Cheeseburger Pie.

So, here is our recipe:

Easy Cheeseburger Pie
1 lb hamburger
1 Tbsp dried onion (depends on your liking)
1/2 tsp. salt (optional, we usually omit)
1 C. Shredded Cheddar Cheese
1/2 C. Bisquick or pancake mix
1 C. milk
2 eggs
about 1 C. frozen veggies, we like to do corn, but also do mixed

Preheat oven to 400 degrees F. Spray 9-in pie plate with cooking spray. Cook beef and dried onion until done. Add salt (if you like). Spread in pie plate. Add frozen veggies. Sprinkle with cheese. In small bowl, stir Bisquick, milk and eggs with whisk until blended. Pour into pie plate.

Bake about 30 minutes or until knife inserted in the middle comes out clean.

Serves 6.

I of course love this meal because I stretch the 1 lb of hamburger (sometimes 1 and a half) to make 2 pies. Then we double everything else. It is delicious, it is about $3-4 to make (cheaper if you can get some items on sale like your frozen veggies and cheese). And it is SOooo easy.

I make this recipe all the time too! We like to add ketchup and mustard for some more flavor but it's just as good without :o) I'm finding that I have to double all my recipes as well! Now that they boys are getting older and eating like there's no tomorrow lol.

I LOVE cheeseburger pie! My oldest daughter can not have cheese any longer but I think I will have to make this for my husband and I-thanks for reminding me of it. I like the idea of adding a veggie to it rather than on the side.
