We found a new favorite. And it can be eaten at breakfast! It is a breakfast cookie!
Breakfast Cookies
1 C. peanut butter
3/4 C. honey
1/2 C. oil
2 tsp. vanilla
2 eggs
Mix well in a large bowl.
Then add:
2 C. flour (I used 1 c. reg. flour, 1 c. whole wheat)
1/2 c. oatmeal (I used old fashioned, but the other would be fine)
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
Mix well. Then stir in:
1 c. rice krispies
1 c. dried cranberries (from Walgreens for $1!)
1 c. chopped nuts (I used walnuts)
Drop by tablespoons on a buttered pan. Bake at 350 degrees, for 12 minutes. Remove and let cool.

I use a recipe really similar to this, but had not thought of adding the dried cranberries. That would be a real hit in our home, thanks for the idea!
Cookies for breakfast is what I call the ideal meal. Easy, quick and can be et (eaten) on the run. No, I don't normally say 'et' but it just came out and I thought it funny!)

Mmmmm, those look so good! I'm the orignal Cookie Monster doncha know, and just wish I could eat that sort of thing these days. Maybe if I substituted the peanut butter with cashew or almond butter, the honey with agave nectar, and the flour with coconut flour....hmmmm. Could work!
